Although exportation of fresh fruits has become an important foreign exchange earner for Thailand, export market for Thai fruits still faces various problems especially the low quality of fruits. Research studies to find out apprepriate ways to use technologies for controlling the export fruit of a quality and standard that consumers demand, are thus indispensable. This study is divided into two parts. The first part is to collect data about several parameters of Thai fresh fruit industry such as factors involved fruits' qualities, their production source and season, and fruit marketing. In the second part of the project, determination of respiration rate, postharvest physiological changes, and chilling injuries of some fruits were carried out in the laboratory. The collecting data indicated that Thai fruit production sources depend on the varieties and distribute to every region of the country, the production time of each variety on the average will delay from one to two months, but varieties of them supply in year-round. The fruits which have maximum export value are longan, durian, banana, papaya, grape and mango respectively. For foreign market, Hongkong is the most important with Singapore and Malaysia be the second and third. The Thai fruit export value also has tendency to increase annually. Experiments revealed that using of low temperature could be the easiest way to extend the fruits' shelf-life, but the temperature should be high enough to prevent chilling injury which are different from one kind to another. However, the only and the best way to control improve qualities of fruit for export is to control their qualities from the very early stage i.e. from the hands of the planters to the hands of the consumers.
