The ice cream market in Thailand has a gradual growth, because of many support factors such as the hot climate, the relaxation from eating ice cream, the health conscious trend and The low consumption per head comparing to other countries. So the study of home-made herb ice cream is very interesting. From the survey of 207 consumers, 91.30% are interested in home-made herb ice cream. Most of them have personal passion or persuaded from friends. The mostly come in group of 2-3 peoples, lovers or friends. There have a good image on herbal in ice cream. The consumers focus on the taste of ice cream. The decreasing of seasonal sales can significantly impacts on the margin. Thus, the marketing promotion such as: special discount, new taste ice cream and seasonal premium gifts should be planned. The project is feasible in terms of marketing, production process, service process and financial aspect. The investment cost of capital is 11.286%. With the project return is 2,221,189 Baht, with the internal rate of return 33.97 %, and the payback period of 2 years and 4 months. This project is considered to be worth for investment.
